My vote goes to postfix. We're using it widely here at the office,
and we're quite happy with it. It's got all the features you need,
security, and plenty of speed. Last not least, it is well documented.
After having read some more on MTAs, I came as well to the concusion
that postfix is a nice candidate... :-)
Now I have also read about postfix-mysql and courier-authmysql which
seem interesting to me as well, mainly because I don't want a unix
account for each email address. Apart from doing it the mysql way, is
there another way?
